May the dandelions bloom!

Dandelion flowers provide an important early food source for insects. Let’s celebrate this much maligned, very useful plant.

Dandelions make a tasty but bitter green. I like to pick the leaves when they are small, before the flowers go to seed. If we keep picking the leaves regularly, the plant will keep us in excellent supply of fresh little dandelion leaves.

Here is an interesting (new-to-me)way to use the magnificent dandelion : dandelion capers!
